30-Minute Peanut Beef Rolls with Roasted Peanut Sauce

Ground beef (or swap in chicken or pork) gets cooked in a spicy chili sauce with garlic, ginger, and roasted peanuts until the edges turn nice and caramelized. Then, it’s all rolled up in tortillas with shredded cabbage and Thai basil, then topped with an easy roasted peanut sauce. Every bite is spicy, nutty, and just the right amount of salty. These rolls are perfect as an appetizer, or you can serve them with steamed rice for a quick dinner.

Lately, I’ve been cooking a lot of Asian and Chinese-inspired dishes—think warming soups, rice bowls, and, now that I think about it, some Mexican flavors too. January always sparks a fresh wave of inspiration for me. I’m still totally in cozy mode, and I’ve been adding extra color to my meals to balance out all the snowy winter vibes outside!

Last week, I stumbled on a big bunch of Thai basil at the store, which got me thinking: Why not make a spicy peanut beef roll?

They’re kinda like my Thai basil beef rolls, but with a roasted peanut oil sauce that takes them to the next level of deliciousness.

I ran the idea by my mom and my cousin Abby, and right away, they both said, “Oh, make the peanut beef rolls—those sound amazing!”

We always have fun with takeout-style recipes since we live up in the mountains where there aren’t many quick takeout options nearby. Making these at home is the best solution!

I whip these rolls up FAST using ground beef and flour tortillas. The sauce? Literally takes minutes to mix together. You’ll have these ready to eat in under 30 minutes!

Special Tools

Just a skillet and a bowl for the sauce. Easy!

Steps

Step 1: Cook the Beef

For the beef, I use ground beef, garlic, and pickled sushi-style ginger (I grab mine from Whole Foods). Cook it all together with chili sauce and roasted peanuts over medium-high heat. Feel free to swap in chicken or pork if you prefer.

If you can’t find Thai basil, regular Italian basil works in a pinch! Or, skip the basil altogether and just use cilantro and green onions (or scallions—what do you call them?).

Step 2: Roll ‘Em Up!

Just warm up your favorite flour tortillas (I use homemade ones), then roll the beef mixture inside. Top with fresh chopped cilantro.

I like rolling these while the beef is still warm—it makes the whole process easier.

Step 3: The Roasted Peanut Sauce

Super simple—you can mix this in a food processor or just whisk it by hand in a bowl. It’s roasted peanut oil, creamy peanut butter, rice vinegar, tamari, garlic, and chili flakes. Adjust the seasoning to taste!

Step 4: Serve

I love serving these warm with the peanut sauce on the side for dipping. Add a side of rice, and boom—dinner’s done!

These peanut rolls are perfect for any night, whether it’s snowy, rainy, or just one of those nights when you need a cozy, fun recipe to make at home.

So grateful for easy dinners like this!
